Catuai

Catuaí from El Paraíso 92 is a familiar Brazilian-bred variety reinterpreted through highly controlled, process-driven cultivation. Originally developed from a cross between Mundo Novo and Caturra, Catuaí is typically associated with balance and reliability. At El Paraíso 92, however, advanced fermentation techniques and precise post-harvest control transform the variety, allowing Catuaí to express unusually vibrant aromatics and sweetness, demonstrating how processing can dramatically reshape a well-known cultivar.
