El Paraíso 92 is a highly innovative coffee farm located in Cauca, Colombia, known for pushing the boundaries of modern coffee processing. Led by producer Diego Bermúdez, the farm has become internationally recognized for its precise use of controlled fermentations, temperature regulation, and experimental techniques that dramatically shape flavor expression. Catuai
Catuaí from El Paraíso 92 is a familiar Brazilian-bred variety reinterpreted through highly controlled, process-driven cultivation. Originally developed from a cross between Mundo Novo and Caturra, Catuaí is typically associated with balance and reliability. At El Paraíso 92, however, advanced fermentation techniques and precise post-harvest control transform the variety, allowing Catuaí to express unusually vibrant aromatics and sweetness, demonstrating how processing can dramatically reshape a well-known cultivar.
