What We Listen: クロとシロ — by Hiroshi Suzuki
At Finca La Playita, coffee is more than a crop—it is a family tradition passed down through five generations. The farm’s story continued in 2004, when Victor’s grandfather, a third-generation coffee farmer, entrusted the land to his son, Jose Elicio Gutierrez. Under Jose’s care, La Playita produced traditional varieties such as Castillo and Colombia, using a classic washed process rooted in the rhythms of the region. In 2015, Jose passed the farm on to his son Victor, the fifth generation to cultivate this land. With each generation, the farm has carried forward not only knowledge and practice, but also a deep respect for the relationship between land, harvest, and cup. Today, La Playita reflects that lineage in every stage of production—from the careful stewardship of the farm to the coffee it ultimately becomes.
Wush Wush is a rare, high-altitude Ethiopian heirloom variety known for its intensely fruity, floral, and sweet profile. Originally from the Wushwush region of southwestern Ethiopia, it is a native landrace now also cultivated in Colombia, where it thrives in high-elevation terroirs. In this lot, a carefully managed natural process includes 80 hours of fermentation in cherry followed by 25 days of sun-drying, deepening sweetness, fruit intensity, and complexity while preserving its vibrant floral character. The result is a cup with pronounced aromatics, layered fruit, and refined sweetness.
